Story

Hi, my name is Anilson Fária Ramos and I’m a micro-producer from the Matas de Minas region, which is situated in the southeastern part of the state Minas Gerais, along the border of the states of Rio de Janeiro and Espírito Santo. We are the third generation of traditional coffee-growing families in the Matas de Minas region. I have two young daughters that help us daily. As a result of our work as a crop sharer, we bought the land, from where we make our living. Our farm has about 3 hectares which are dedicated to coffee production.

Knowledge allows us to innovate and that is why we are presenting this specialty coffee that is the fruit of much dedication and care in all production and commercial processes. We aim, in a professional manner, at consumer satisfaction and environmental balance.

In the past, I’ve participated in a competition which took place in São Domingos das Dores and was promoted by EMATER which is governmental organisations who provide courses in agriculture. I managed to win a second place at the regional level Ipatinga.

“This year's harvest started in May and finished in August, selectively in two stages. Coffees went through anaerobic fermentation for 6 days. The cherries were dried in a greenhouse for 35 days, resting at 14%, and after 15 days at open the field until reaching 11% humidity, which was processed and passed through the 16 sieves.

As a next step, we carried out the selection of the best grains to bring the best flavour to your table.
