Caldas Region
Caldas stands as a distinguished coffee-producing region in Colombia, celebrated for cultivating some of the world's most exquisite Arabica coffee beans.
Located at the heart of the country, Caldas is an integral part of the renowned "Coffee Triangle." Its climate is characterized by warmth and humidity throughout a significant part of the year, with average annual temperatures ranging from 13°C to 24°C. Thanks to its proximity to the Equator, Caldas enjoys minimal temperature fluctuations year-round.
Restrepo Family & El Jardines Chambaku
This exceptional coffee is crafted by the dedicated Restrepo Family in Chinchiná, Caldas. Elmer Restrepo, the farm owner of Jardines Chambaku, embarked on his coffee journey nearly 40 years ago, starting with the dry milling process of coffee. His passion for this aspect of the coffee cycle eventually led him to become a coffee grower. Taking the reins now is Elmer's son, Juan Felipe, who oversees the processes at the farm. He's known for his meticulous nature and an unending quest for new, innovative, and unique coffee processing methods, which are evident in all the coffees produced on their more than 150 hectares of land in Chinchiná.
Processing
The process begins with an extensive 48-hour water immersion in order to develop a more intense but clean profile and showcase all the attributes of the variety combined with flavours unique to the process.
Once the fermentation is over, the cherries get spread on african beds for a drying stage under the sun for up to 15 - 25 days depending on the actual weather conditions. When optimum moisture levels are obtained, the coffee gets stabilised in cherry for another 30 days.
