The names behind this coffee are one and only Martha Montenegro and her sons Elias & Shady Bayter at El Vergel farm. They chose to produce decaf from high-quality beans, breaking with the tradition of using lower-grade coffee.
Their dedication ensures a decaffeinated cup that retains its full character and flavor.

El Vergel Estate is a renowned Colombian coffee farm in Tolima, led by the innovative Martha Montenegro, Elias Bayter & Shady Bayter. The El Vergel farm originally cultivated avocados in the 90s, but pivoted to coffee around 2010, focusing on high-quality, diverse varietals.
The farm is also known for pioneering experimental processing like Koji and anaerobic fermentation.
Processing & Flavor
This coffee is processed as a natural along with the sugarcane process.
The beans are steamed to swell and ease caffeine extraction.
Once done, they are gently washed with sugarcane-derived extractors, rinsed with water, steam, and dried back to their original moisture.
This careful method preserves the bean's structure and flavor integrity.
The Taste Idea
" Colombia Condor represents a fundamental step for us within our decaf offering. The dry processing and sugarcane method allow us to present a pure flavor reminiscent of cocoa, orange juice, spices, and dried apricots. Our main idea was to introduce the cleanest possible decaffeinated coffee. "
