Farm

El Vergel Estate is a renowned Colombian coffee farm in Tolima, led by the innovative Martha Montenegro, Elias Bayter & Shady Bayter. The El Vergel farm originally cultivated avocados in the 90s, but pivoted to coffee around 2010, focusing on high-quality, diverse varietals. The farm is also known for pioneering experimental processing like Koji and anaerobic fermentation.

Processing

This coffee undergoes a unique two-step, temperature-controlled anaerobic fermentation for 48–60 hours to create an intense yet clean profile that highlights the variety and process-driven flavors. The pH is carefully monitored, followed by intermittent drying at varying moisture levels to enhance complexity, then finished in silos for precise moisture control. Finally, the coffee is stabilized for 45 days to homogenize the beans and further develop complexity.
