Coffee Story


Although Huver Castillo comes from a third-generation coffee farming family, he only entered coffee farming full-time in 2015, having previously worked as a mathematics teacher. El Paseo farm, located near Buesaco along the Suma Paz trail, has been in the family for over 20 years.
Over time, Huver has focused on precision and innovation in processing to bring out distinctive flavours while maintaining cleanliness and balance in the cup.

Region

Nariño

Located in southwestern Colombia, the Nariño region is known for high-altitude coffee farms ranging from 1 500 to 2 200 m above sea level. Volcanic soils, cool nights and significant elevation differences create ideal conditions for slow cherry development.
Coffees from Nariño are characterized by bright acidity, full body and expressive fruity and floral notes.


Farm

El Paseo farm is located in the Buesaco area of the Nariño region with elevations ranging from 1750 to 1950 m above sea level.
The farm benefits from volcanic soils, natural shade trees and steep slopes overlooking the Buesaco valley.


Processing & Flavor

Variety Caturra.
The process begins with careful selection of ripe cherries and a 36-hour pre-fermentation in cherry. After floating and a 2% sea salt disinfection, the beans undergo anaerobic fermentation in stainless steel tanks.
Once pulped, mosto is collected and re-added with enzymes to promote a specific floral profile. Main fermentation continues for six days. The beans are then mechanically dried in a silo for 2-3 days below 38°C, followed by a 15-day stabilization period.
