Region

Tolima Region lies in Central-West Colombia, within the Cordillera Central, with nutrient-rich soils and diverse microclimates. Farmers here have shifted from large-yield commodity crops to specialty microlots, focusing on quality and care, making Tolima one of Colombia's most exciting and progressive coffee regions.


Farm & Producer

El Vergel Estate is a renowned Colombian coffee farm in Tolima, led by Martha Montenegro, Elias Bayter, and Shady Bayter. The farm originally cultivated avocados in the 90s but pivoted to coffee around 2010, focusing on high-quality, diverse varietals. El Vergel is also known for pioneering experimental processing methods such as Koji fermentation.


Processing and Taste

Red and Yellow Caturra. This coffee is processed as a natural along with the Sugarcane decaffeination method. The beans are first steamed to swell and ease caffeine extraction. They are then gently washed with sugarcane-derived extractors, rinsed with water and steam, and dried back to their original moisture level. This careful method preserves the bean's natural structure and flavour integrity.


Flavor Profile

Colombia Condor represents a fundamental step for us within our decaf offering. The natural processing and Sugarcane method allow us to present a clean profile with notes of cocoa, orange juice, spices, and dried apricots. Our main idea was to introduce the cleanest possible decaffeinated coffee, and Colombia Condor delivers exactly that.

Preparation Recommendations

All you need is ~200 ml of hot water (~95°C) and a mug.

1. Pick:
Open the sachet and take out the filter.

2. Open:
Tear, extend hangers, and place on your mug.

3. Brew:
Make three full pours, and after each one, wait for the water to fully drain.

4. Enjoy:
Discard the filter, stir, and drink your coffee!
