Some cacaos want to impress you. This one just pulls you in. Grown at Finca La Catarina in El Salvador, at the foot of Chaparrastique — a volcano that's still very much alive. Cyrille processes everything on-site, at La Alpina, with the kind of obsession that shows up in the cup. Nutty, winey, warm. A slow drift of orange blossom you didn't see coming. This is what cacao tastes like when someone refuses to cut corners.
