Region
Guji Zone, located within the Oromia Region of Ethiopia, creates ideal conditions for exceptional coffees. With its steep hills, volcanic soil, and elevations above 2,100 masl, cherries mature slowly, developing pronounced sweetness, complexity, and clarity. Smallholder farmers from the villages of Bookkisa and Shoondhisa carefully handpick ripe cherries, capturing the essence of this unique terroir. Along with rich biodiversity and traditional agroforestry, Guji has become one of the most sought-after areas.
Station & Producer
The name behind this coffee is one and only Ture Waji with his team at Sookoo Coffee. After returning home to Guji, Ture opened his first drying station, Suke, back in 2018. Sookoo Coffee emphasizes sustainability, careful water management, and fair conditions for growers. The station also invests in training and actively supports women and young farmers, continuously strengthening the local community.
Processing and Taste
Varieties Gibirinna 74110 & Serto 74112. Cherries are carefully handpicked at peak ripeness and naturally dried on raised African beds for 15 to 20 days in thin layers, with frequent turning to achieve even drying and maximum consistency. The result is a juicy, sweet, and clean cup that is so characteristic of the Guji region. We chose to offer this coffee in drip bag format, which allows the unique characteristics of this Ethiopian lot to shine through with maximum clarity while making this exceptional coffee more accessible.
Flavor Profile
Ethiopia Bookkisa showcases its sweetness and depth once again. When profiling this coffee, we focused on the richness and juiciness that define it. The cup opens with notes of dark cherry and caramel, followed by a delicate rose-like florality. As the coffee cools, the sweetness of stone fruits develops alongside a brisk physalis-like acidity that rounds the profile beautifully.

Open the sachet and take out the filter.
2. Open:
Tear, extend hangers, and place on your mug.
3. Brew:
Make three full pours, and after each one, wait for the water to fully drain.
