Coffee Story
Wildan along with his wife Atieq started their first coffee project in Sindangkerta, Weninggalih area in West Java back in 2010. Since the first year of production, Wildan has aimed to focus on quality which requires meticulous attention and processes.
While the majority of Indonesian producers are doing the wet hulled coffees, even for specialty, Wildan is focusing on the fully washed. Through a cooperation with the coffee research centre they have been planting a lot of other different unknown cultivars, all separated by blocks at the farm.
Region & Farm
Region
West Java
West Java is a unique coffee growing region within Indonesia. Coffee is cultivated on government-managed forest land, allocated to farmers as a tool to prevent deforestation.
It is common to see coffee growing under pine and eucalyptus trees, creating a distinctive microclimate that supports biodiversity and slow cherry maturation.
Farm
Frinsa Estate is situated in West Java, known locally as Sunda. The farm includes a wet mill, storage space, and dry mill, all located at an altitude of 1400 masl.
Frinsa Estate has six main growing plots spread out in the area. Apart from those, they buy cherries from a few selected outgrowers in the surroundings generally separated by area.
Processing & Flavor
Varieties Ateng Super, P88, Borbor, Andungsar, Sigarar Utang and Lini S-795.
All processing takes place directly at Frinsa Estate, allowing full control from harvest to shipment.
The cherries are washed and floaters are removed. They are fermented under water for four days (96 hours) without additives, then dried whole on tarpaulin on the concrete patio anywhere between 14-22 days, depending on weather conditions.
The Taste Idea
" Frinsa coffees are always standout within our offer and this year is no different. We selected Manis profile which translates as sweet in bahasa language. Therefore my main goal was to bring as much of it as possible while keeping the final profile as clean as possible. The result reminds us of grape sugar, black currant jam and coke with slight fermenty notes and florality described as rose water and hibiscus. "
