Penonomé, located in Panama's Coclé province, is a significant commercial center and emerging coffee area known for producing Robusta and some specialized coffee varieties in its humid, mountainous northern areas like Toabré. Legends also say that a treasure belonging to the pirate Captain Morgan is hidden in the local hills.
Farm
Kiva Estate is a unique team of native Panamanians who, unlike traditional coffee farmers, come from diverse professional backgrounds such as IT, marketing, and management. Their bond, rooted in a friendship that has lasted over 30 years, eventually led them to the world of coffee farming.
Processing and Taste
In the Anaerobic Slow Dried (ASD) process, the coffee is fermented anaerobically in water tanks for 10 days and then slowly dried under strict control. This sophisticated process gives the coffee extraordinary elegance and depth.
Flavor Profile
Unusual and distinctive taste profile with pronounced sweetness reminiscent of chocolate truffles and yellow raisins. Lower mild acidity evoking mandarin and tropical guanábana fruit. All finished with a whiskey-like aftertaste.
