The Story behind the Coffee
In Peru, the word "Don" in the case of men and "Doña" in the case of women was used before as a symbol of respect. Today, in some parts of the country, especially in the provinces, these words are still used to refer to older people or those who are experts in some subject. Thus, in el Sector el Campo, Carlos Vega is better known as “Don Vega”. Don Vega is a benchmark in coffee cultivation. Young and old come to him when they need some advice for their farms and coffee commercialization. Don Vega's opinion definitely weighs heavily within his neighbours.

Region
The Cajamarca region in northern Peru, surrounded by the Andes near the equator, enjoys a warm climate, fertile soils, and lush vegetation. Rich in culture and traditions, the area has preserved its heritage over time. The province of Cutervo is known for its cloud forests, moors, and dry forests, protected by the 82,000-hectare Cutervo National Park, which supplies food and water to over 90,000 people across seven micro-watersheds. Agriculture here includes coffee, sugarcane, rice, fruit trees, and cattle for milk and meat.
Farm
La Guayaba farm is located in the Cajamarca region of northern Peru at an altitude of around 1,700 meters above sea level, where the cooler mountain climate and fertile soils allow the coffee cherries to ripen slowly. The farm focuses on careful selective picking and traditional washed processing, highlighting clarity of flavour and bright acidity. Varieties such as Caturra, Typica, and Pache are grown here, creating a balanced and complex cup profile.
Processing
Typica, Pache Yellow & Red Caturra varieties. Selective picking is being used to ensure mostly ripe cherries are being picked. Once done, the cherries are left to rest for 2 days in order to stabilise, then depulped and let ferment for another 70 hours in open tanks. After that they wash the beans with clean water and put it to dry for 5 to 8 days in tents, depending on actual weather.
