Town of Armenia, in the department of Quindío, lies at the heart of Colombia's "Coffee Triangle". At elevations of 1,450–1,500 masl, with annual rainfall of 1,800–2,000 mm and temperatures of 18–28 °C, conditions here allow for slow cherry maturation and the development of rich, complex flavour profiles.
Farm & Producer
Luz Helena Salazar grew up in Armenia and has been producing coffee for the last 20 years. She owns Maracay and La Leona farms and is the mother of Carlos and Felipe, co-founders of Cofinet. Her passion for coffee was sparked by her husband Jairo Arcila's work on coffee farms. With his support, she learned to care for her trees, and today, with support from Cofinet, she focuses entirely on producing the best specialty cherries she can.
Processing and Taste
Papayo is a unique variety that emerged as a natural mutation in the Huila region, named for its elongated beans resembling a papaya fruit. It stands out for its exceptional sweetness and floral complexity, comparable to the celebrated Gesha. Luz Helena and her team selectively harvest only the ripest cherries, which are floated and hand-sorted. For this lot, cherries underwent a 45-hour aerobic fermentation that highlights the coffee's intrinsic flavours, followed by drying on raised beds for 8 to 12 days until reaching ideal moisture content. We chose to offer this coffee in drip bag format, which allows the unique characteristics of this exceptional variety to shine through with maximum clarity while making it more accessible.
Flavor Profile
Luz Helena Salazar's coffee is a celebration of everything that makes the Papayo variety so special. The cup opens with juicy acidity reminiscent of passion fruit, followed by the rich sweetness of mango and forest strawberries. A full-bodied and intensely fruity profile that perfectly reflects Luz Helena's lifelong passion for coffee.

All you need is ~200 ml of hot water (~95°C) and a mug.
1. Pick:

Tear, extend hangers, and place on your mug.
